Everyone wants to wake up to warm cinnamon rolls on Christmas morning right? Well I’m about to make your life a whole lot easier. Cinnamon rolls freeze SO well, there is no need to wake up at the crack of dawn to make them on Christmas morning or stay up late prepping on Christmas Eve. Here’s the trick – freeze them before the second rise.
Make your favorite cinnamon roll recipe – mine is this one from Ambitious Kitchen – mix the dough, roll them out, do the cinnamon and sugar, roll them up, pop them in the pan *then* cover the pan with a layer of plastic wrap and a layer of tin foil and stick them in the freezer.
On Christmas Eve right before bed take them out of the freezer and remove the tin foil layer. Leave them on your counter under the plastic wrap to thaw and rise overnight, then bake and frost in the morning. I have done this many times and it always turns out perfect! I also *highly* recommend drizzling them with heavy cream before baking, just trust me! This year I even made the frosting and froze it. I’ll keep you updated on how that turns out.
